Orange Plum Chicken its whats for dinner ....






1/3 cup plum preserves
1 tablespoon soy sauce
2 to 2 1/2 pounds meaty chicken pieces (we used breasts)
1/3 cup orange juice
1 teaspoon cornstarch (we inadvertently skipped this ingredient)

In a small bowl stir together plum preserves and soy sauce.  (My mom accidentally added in the orange juice as well).  In a 3 quart rectangular baking dish (we used a casserole dish) arrange chicken pieces so they don't touch.  (ours touched and nothing exploded)  Brush chicken pieces with plum mixture.

Bake, uncovered, in a 375 degree oven for 45-55 minutes or until chicken is tender and no longer pink.  Remove chicken from dish, reserving juices; keep warm.  (we didn't do this, as my mom had already kinda omitted the next step)

Pour reserved juices into a 2-cup glass measure.  Skim fat from juices.  Transfer juices to a small saucepan.  Combine orange juice and cornstarch; stir into reserved juices.  Cook and stir over medium heat until thickened and bubbly.  Cook and stir for two more minutes.  Serve over chicken.  (We did not do any of this)
